Eat Coffee: 3 Recipes to Fight Food Waste By Cooking With CoffeeFlour

Happy Day 2 of Earth Week 2017! 

Byproducts are bountiful in our food system. In some cases, “edible upcycling” is already underway. In our “Food Waste Alchemy 101” post we covered a few of these under-appreciated examples, such as whey protein from cheese production.

At ReGrained, we aspire to take what’s left behind, discarded, or forgotten and put those overlooked, but awesome ingredients back to work. We’re bringing Upcycled Brewer’s Malt into foods, and are inspired by our comrades in the fight against food waste.

One of our favorites is CoffeeFlour. CoffeeFlour is an upcycled food product made from the coffee fruitthe cherry pulp that encases our favorite breakfast bean. This nutritious pulp has historically been discarded, but it has a lot of fiber, antioxidants, iron, and potassium. 

We’re excited to see this ingredient finding its way into the market. It doesn't taste like coffeewe've found it has a nice smokey tartness. You can now easily stock your pantry with CoffeeFlour! It's sold at Trader Joe’s and Sprout’s nationwide, as well as online.

As you seek to make a positive impact on our planet this Earth Week, you can fight food waste with this tasty ingredient! Our friends at CoffeeFlour shared a few of their recipes with us that you can try at home.

1. CoffeeFlour Chocolate Chip Cookies!

This is a great place to start playing with any new ingredient. Who doesn’t love cookies?

Coffee Flour Chocolate Chip Cookie Recipe

Yield: 36 3” Cookies

Ingredients:
  • 2 Cups all-purpose flour
  • 1⁄3 Cup Coffee Flour
  • 1 Teaspoon baking soda
  • 2 sticks unsalted butter, room temp
  • 1 Cup dark brown sugar, firmly packed
  • 1⁄2 Cup white sugar
  • 1 Tablespoon kosher salt
  • 2 eggs, room temp
  • 1 Tablespoon vanilla
  • 2 Cups bittersweet chocolate chips
Instructions:
  1. Preheat oven to 325oF.
  2. Combine all-purpose flour, baking soda, and salt in a bowl and set aside.
  3. Cream butter, sugar, brown sugar, and Coffee Flour in the bowl of a stand mixer.
  4. Combine eggs and vanilla in a bowl with a whisk and set aside.
  5. On low speed, add eggs in three additions, making sure to scrape the bowl often. Once all eggs have been incorporated, add the dry in two additions making sure to scrape the bowl often to ensure a homogenous dough. Incorporate chocolate chips with a paddle.
  6. Cover dough and let rest for 1 hour.
  7. Portion as desired and bake 10-15 minutes until set but not over baked.

2. CoffeeFlour Pasta

Ready to step it up? Here’s a recipe for make-at-home pasta.

CoffeeFlour Pasta Recipe

Yield: 1 lb dry pasta

Ingredients:

  • 1.5 Cups Bread flour
  • ⅛ Cup Coffee Flour
  • pinch of salt
  • 1 whole egg
  • 6 egg yolks
  • 4 Tablespoons milk
Instructions:
  1. Combine all dry ingredients.
  1. Make a well in the center of the dry ingredients and add eggs, yolks and milk.
  1. Mix on medium-low speed until well combined.
  1. Once the dough is mixed, turn out onto a sheet of plastic wrap. Form dough into a ball, wrap tightly and let rest in the refrigerator for 2 hours.
  1. Once dough is chilled, divide into 4 even pieces. Depending on the type of pasta you want to make, use either a pasta roller or a rolling pin to create even sheets. Hand cut or continue using your pasta roller to achieve desired shape.
  2. Pasta can either be used immediately or air dried for future use.

3. CoffeeFlour Barbecue Sauce

    Didn't see this one coming did you? Adding CoffeeFlour to bbq sauce adds flavor, and also helps the sauce stick to the your protein.  

    CoffeeFlour BBQ Sauce Recipe
    Ingredients:
    • 1 (15 oz.) can tomato sauce
    • 1/4 cup Coffee Flour
    • 1/2 cup apple cider vinegar
    • 1/3 cup honey
    • 1/4 cup tomato paste
    • 1/4 cup molasses
    • 3 tbsp. Worcestershire
    • 2 tsp. Mesquite liquid smoke
    • 1 tsp. smoked paprika
    • 1 clove garlic
    • 1/2 tsp. black pepper
    • 1/2 tsp. onion powder
    • 1/2 tsp. salt
    Instructions:
    1. In your blender, blend together all ingredients on low for 30 seconds until smooth. In a medium saucepan, bring sauce to a simmer over medium heat. If the sauce appears too thick, add water until you reach your desired consistency. Use the sauce immediately, or refrigerate in a sealed container for up to 1 week.

    I have a bag of coffee flour in my cupboard, however, all the recipes your company posts also require wheat flour. So, if a person cannot eat wheat in any form, what can we use, or do we just get a refund on the coffee flour and forget about using it. Personally, I would like to try this new flour so how about some alternates to wheat!
